Baked Apple Pie Egg Rolls



Eggrolls and apple pie, why have I not thought of this before now?  These are SUPER easy to make and yet they look like you spent hours on them.  *They are much easier and less time consuming than cheese wontons I can tell you that much!*  Serve them with a side of CoolWhip (if you are trying to keep the calories down) or whip up your own cream to compliment and you will have a wonderfully yummy finale to any meal.  These are also baked, not fried, so you have the added pleasure of not getting splattered with hot oil or making everything smell! -Or at least not with a horrible smell.

Baked Apple Pie Egg Rolls

  •  Two Medium-sized Apples - peeled and diced
  • 3 T of Lemon Juice
  • 1/3 c Sugar
  • 1/4 c Flour
  • 2 t Cinnamon
  • 1/4 t AllSpice
  • 10-15 Egg Roll Wrappers
  • Egg (for wash for the wrappers)
  • Cinnamon and Sugar mixture*
  1. Preheat the oven to 375 F.  
  2. Peel and dice your apples.  Combine apples, lemon juice, sugar, flour, cinnamon and allspice in a bowl.  Mix well and set aside for about 10 minutes.
  3. Prepare a baking sheet by covering it with foil and greasing the foil with non-stick spray.
  4. Scramble your egg in a small bowl to be used for the egg wash.  (I normally add a little water to my egg - you can simply use water if you are so inclined, however egg holds the wrappers together and helps them brown better.)
  5. Place a wrapper in front of you and scoop out about 1 heaping tablespoon of the apple mixture onto it.  Roll the wrappers up like an egg roll and transfer to prepared baking sheet.  Continue to fill egg rolls into all the filling is gone - you don't want to over fill the wrappers or you will explode your egg rolls during baking.
  6. Bake egg rolls for 20-25 minutes until slightly browned.
  7. *Once the egg rolls start to brown remove from oven and brush (or spray) with margarine/butter and sprinkle with cinnamon and sugar.  Replace in oven for another 5-10 minutes.  (This step is not needed, but it gives your egg rolls a nice sugary wrapper.)
  8. ENJOY
As you can see in the pictures, I only got 11 egg rolls out of my apple mixture.  I am sure I could have spread it to 12, but I was on auto pilot and didn't realize I had made an odd number until I was on the last one.  Based upon the average, these egg rolls come out to 75 calories per roll.  All in all a VERY reasonable number for what they are.  Add 2 tablespoons of cool whip and you have a perfectly yummy 100 calorie dessert!
