Brown Sugar Glazed Apple Cake
- 1 1/2 c Flour
- 1 c Sugar
- 1/2 t Baking Soda
- 1/2 t Cinnamon
- 2 Eggs
- 1/4 c Oil
- 1/4 c Applesauce
- 1 t Vanilla
- 1 1/2 c Apples, peeled and chopped
- 1/2 c Brown Sugar
- 3 T Butter or Margarine
- 1 T Whole Milk
- 1/2 t Vanilla
- Preheat the oven to 350 F and grease an 8 x 8 pan (or use a round pie dish - that it what I normally use).
- Combine the flour, sugar, soda, cinnamon, eggs, oil, applesauce, 1 t of vanilla and apples in your mixer and blend well.
- Pour mixture into your prepared pan and bake for 35- 40 minutes or until a tester inserted in the center comes out clean.
- Once the cake is out of the oven, place the brown sugar, butter, whole milk, and 1/2 t of vanilla in a sauce pan and bring to a slow boil. Cook the miture for 3-5 minutes (you will notice it thickens). Remove from heat and let sit until it is no longer bubbling. Spoon the brown sugar mixture over the still warm cake.
- Set the cake aside until the brown sugar mixture cools.
- ENJOY!
Calorie-wise it comes in as expected. I played around a little with the recipe (read: oil/applesauce and eggs) but it is still an apple cake - which never creates a 100 calorie snack! The cake is easily cut into 16 pieces no matter what baking pan you use and therefore I base the calorie count on 16 pieces. One piece of the cake will run you about 175-180 calories - not great but not horrible either and completely yummy!
I substituted whole milk for heavy cream and it came out ok. I would say you should be able to substitute either. If I had to pick one I would use coconut milk, but that is just cause I am not a fan of almond milk. In all honestly you could "probably" omit the milk all together, it would just be more caramel like and less glaze like.
